Firstly, cultivation of modern high-yielding varieties of rice and wheat, rather than exploitation of edible legume seeds, which are much richer in micronutrients than cereal crops, particularly after their grains have been undergone milling and/or polishing processes before they have being consumed (Welch and Graham, 2004). Secondly, up-to-dated plant breeding has been conventionally shifted toward high agronomic yield rather than the nutritional quality, especially in the view of micronutrients composition and concentration (Peleg et al., 2008; Ficco et al., 2009).
